MOROCCAN CHICKPEA SOUP & POPOVERS

My last soup recipe was such a hit, I thought I would share my latest soup obsession. This soup is vegetarian, a tad spicy and perfect for a cool winters eve. I have been making it way too often, alongside the most delicious popovers. Two of my dear friends bought me a popover pan back in June and I have been baking them almost weekly. Once you see how easy they are to make, you wont stop making them either. There is NOTHING like fresh bread! You don't need a popover pan to make these, you can use a muffin tin, but they wont come out quite as puffed up.
MOROCCAN SPICED CHICKPEA SOUP
Recipe by Dave Lieberman {from the Food Network}

SERVES 6
1/4 cup extra-virgin olive oil
1 large onion, medium diced
6 to 8 cloves garlic, pressed
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/8 teaspoon cayenne pepper
1 heaping teaspoon sweet paprika
1 (14.5-ounce) can chopped tomatoes
3 (15-ounce) cans chickpeas, drained and rinsed well
1 quart vegetable broth
1 teaspoon sugar
Kosher salt
Freshly ground black pepper
1 (5-ounce) package pre-washed baby spinach


Heat olive oil in a large pot over medium-high heat. Add onion and garlic and saute until the onions begin to turn translucent; lower heat if browning starts to occur. Add spices and saute a minute or so. Add tomatoes, chickpeas, broth, and sugar. Season with a couple pinches of salt and 10 grinds fresh pepper. Stir well. Chickpeas should be just covered with liquid. If level is shy, add some water so the chickpeas are just covered.

Bring to a simmer, then lower heat to low and gently simmer for 45 minutes.
Remove soup from heat. Use a potato masher to mash up some of the chickpeas right in the pot. Stir in the spinach and let heat through until wilted, just a couple minutes.
Season again, to taste, with salt and pepper.



POPOVERS

RECIPE BY ANNA THOMAS {from her book Love Soup}
SERVES 6
3 large eggs
1 cup whole milk
2 tbs unsalted butter, melted, plus more for the pan
1/2 tsp sea salt
1/2 tsp finely chopped fresh or dried thyme
1/2 cup whole wheat flour
1/2 cup unbleached white flour


Preheat the oven to 425
Beat the eggs with the milk, 2 tbs of melted butter, salt, thyme. Beat in the flours until the batter is perfectly smooth. 


Brush 12 nonstick three-inch muffin cups lightly with butter. Distribute the batter evenly between them, filling the cups about halfway. 


Bake the popovers for 15 minutes, then reduce the temp to 350 and back another 20 minutes. The popovers will balloon up high over the rim of the muffin cups and turn a deep golden brown. 


{I have been playing with the popovers lately, making them different each time. Sometimes I leave out the thyme and add lots of fresh ground black pepper. Sometimes I add grated parmesan to the batter. Feel free to experiment!}

SWEET STYLE. BACK IN BLACK

I had been eying this wall on my way to work each morning for weeks. I knew I wanted to shoot something in front of it, but what? I remembered this dress I bought a while back from F21 and thought it might be perfect. The yoke on the dress resembled the pattern on the wall. It was one of those gray days, where everything seemed to be in black and white. James thought we should take this opportunity to do our first black and white shoot. SNAPSHOTS FROM OUR CHRISTMAS PARTY

I had so much fun at our holiday party this past weekend. I was too busy talking to friends to remember to stop and take photos, but I got a few quick ones in of the spread before people arrived. 
James ended up bringing the camera out much later in the night and between him and the extraordinary Jesse B. I have some fun pics to share. I only wish I had captured more of my friends throughout the night! I have a HUGE smile on my face in every photo, so I must have been having a blast. Oh my, this week seriously flew by. I am having a little Holiday soiree this weekend and I have been a busy bee, decorating the house and grabbing any last bits and bobs. A WINE TASTING SOIREE

The boy and I went to a wine tasting party this past weekend.It's quite a fun idea, so I thought I would share!

How to throw a wine tasting party
1. Everyone brings a bottle somewhere between $10-16. As soon as you get to the party, the host/hostess covers the label with paper and numbers it. 
2. You throw some money in to a pot, grab some paper and a pen and start tasting wines. Make sure you write down what you thought of each. 
3. Everyone votes on two, a first favorite and a second favorite. The winner gets the majority of the money and second place gets a little bit as well. The money makes it interesting, trust me. 
4. I think it's key not to invite too many people, keep it intimate. We tasted ten wines the other night and believe me, I was a little wined out when the night was over. I just don't know how to taste and spit out like the pros.

What to serve
 You don't want your guests getting too intoxicated, now do you. Here are some ideas of what to serve...

1.White Bean and Rosemary Bruschetta
Gently toss drained and rinsed contents of 12.7-ounce jar of white beans with 2 teaspoons finely chopped fresh rosemary and 1 tablespoon extra-virgin olive oil. Season with salt, and spoon onto toasted baguette slices. Makes about 12

2.Cheese Plate
Put out a selection of hard, medium and soft cheeses. Some Marcona almonds, figs, apricots and crackers.
3.Bacon Wrapped Dates
24 large moist dates, such as medjool
12 slices of bacon
2 oz. softened goat cheese
24 whole toasted unsalted almonds
a. Move oven rack to upper third of oven and preheat oven to 500 °.
b. Pit dates, tearing them open as little as possible. Set dates aside. Halve the 12 slices of bacon crosswise. Put the goat cheese into a pastry bag fitted with a round, plain 1⁄4" tip.
c. Stuff cavity of each date with 1 almond. Pipe goat cheese into each stuffed date. Wrap 1 piece of bacon around width of each date.
d. Put dates on a baking sheet, seam side down, at least 1⁄2" apart. Bake until bacon is golden and crisp, 6-8 minutes. Set aside to cool briefly before serving.

How we chose our bottle
We went to a local wine store, told the sales clerk about the party and he grabbed this bottle for us. He said "I'll split the money with you." Something about the bottle design and the name screamed Christian Audigier and I didn't want to believe it. A blend? Well, at least the label would be covered for the party. We went with it and I am glad we did. I guess you can't judge a wine by it's label {or name}.
